Our second release of the season from Mooleh Manay Estate is here. With ripe red fruit and a wine-like character, it’s perfect for autumn. For this lot, ripe cherries were sealed in custom-built tanks and prepared for carbonic maceration, a process also used in winemaking. Fermentation in an oxygen-free environment brought out the bean’s sweet-tart spirit.
