Grown by Vaibhav Gupta at Uchangi Estate in Hassan — a friend of ours and a green supplier to Bloom every year. SLN9 at around 1000 MASL.
An extended anaerobic natural: whole cherries ferment sealed and oxygen-free over a long, slow fermentation, then dry gently on raised beds. This is the lot we brewed at the National Brewers Cup.
Berries, grapefruit, and honey — juicy, sweet, and layered. Best for expressive pour overs, bright espressos, and small fruity milk drinks.
