Grown within the forest landscapes of the Beforest's Poomaale Collective in Coorg , this Canephora develops slowly under shade, nourished by biodiversity and living soil. Here, coffee is not cultivated in isolation but as part of a thriving ecosystem. For this lot, freshly harvested cherries are dried in a controlled polyhouse whole for 15-20 days , allowing the fruit to interact with the bean as it dries.
