Run by Ashok and Divya Patre, Ratnagiri Estate has been steadily advancing specialty processing through their science-led approach. In recent years, they have added a microbiology lab, bioprocessing unit, and climate-controlled drying chamber to the farm. With this special coffee, we offer a window into the innovative work they are doing. To process this lot, ripe cherries were placed in bio-reactors after floater removal.
