Grown by Prakash Balaraman at Riverdale Estate in the Shevaroy Hills — SLN9 at 1450 MASL.
An experimental honey: ripe cherries floated and depulped with a layer of sweet mucilage left on, fermented with rose petals, then slow-dried on raised beds up to 30 days and vacuum-packed at 11-13% moisture.
Clean and vibrant — floral, honey, and stone fruit, with balanced acidity and a smooth, rounded mouthfeel. Best for expressive pour overs, bright espressos, and small fruity milk drinks.
